This weekend, Colin and I spent time in Powell Butte, OR celebrating our friends' wedding. It was a beautiful, fun weekend but let's just say our dietary choices were anything but healthy. With that being said, our first stop when we hit the Portland city limits was the grocery store. We wanted something light and at least mildly nutritious so a spinach based salad sounded like a winner. We paired the salad with a simple chicken breast seasoned with salt and pepper, but the salad works well with lots of chicken, steak or grilled fish recipes. Here it goes...
Ingredients:
1 bunch of spinach (about 4 cups), loosely chopped
1 Ambrosia apple, diced
1/2 red onion, diced
3 tbsp Grade A maple syrup
3 tbsp white wine vinegar
salt and pepper, to taste
Serving size: 3 to 4
Directions:
Combine the spinach, apple and red onion in a bowl.
Slowly mix in maple syrup and white wine vinegar, tasting as you go. Depending on how much bite the red onion has, you may want to vary the amounts. Add salt and pepper to taste and toss.
