Sage and Apple Hash

I've said it before and I'll say it again, breakfast is a truly fabulous meal. My favorite part of the weekend is having the time to make a big breakfast and sit and enjoy it without any hurried timeframe. One meal that is a go-to weekend breakfast option for me and Colin is hash. We've tried all kinds of hash in the past and one of our absolutely favorites is this sage and apple hash recipe. I hope you enjoy it as much as we do!




Ingredients:

8 to 10 small yukon gold potatoes, cooked and quartered
1 Pink Lady apple, sliced
1/4 c. cheddar cheese, grated
4 eggs
6 to 8 sage leaves, loosely chopped
4 slices bacon (I prefer peppered bacon), cooked and cut into 1/2 inch pieces
3 tbsp. green onions, chopped
1 tbsp. extra virgin olive oil

Serves: 2 to 3 





Directions:

Pour the olive oil in a cast iron skillet over medium heat. Add the green onions and cook for about one to two minutes. Add the potatoes, apples, and bacon and cook for another minute. Top with sage and cheddar and place in the oven at 350 degrees until the cheese has melted. 




While the hash is cooking in the oven, make your over easy eggs to top the hash with. I usually do 2 eggs per person but you can do as many as you'd like. Enjoy!
